MEXICAN WHOPPER WAFFLES 
1 1/3 c. cornmeal baking mix
1 c. instant refried beans
5 oz. soft tofu
3/4 c. nonfat milk
2 tsp. oil

Combine cornmeal and bean mixes. Beat tofu with milk and oil. Stir into dry ingredients until just blended. Heat waffle iron. Spread batter on to iron and cook until lightly browned. Keep warm as you cook remaining batter. Top with Mexican toppings such as salsa, shredded lettuce, cheese, etc.
