CORNBREAD CASSEROLE 
1 lb. ground beef
1/2 lg. onion, chopped
Salt and pepper to taste
1 (6 oz.) cornbread or jalapeno cornbread mix
1 (17 oz.) can cream style corn
1 egg, lightly beaten
1 (7 oz.) can chopped green chilies
8 oz. Cheddar cheese, grated

Brown and drain meat and onions. Season with salt and pepper to taste. In mixing bowl, combine cornbread mix with cream style corn and egg. Spread half of batter, thin layer, in bottom of 10-inch pie plate or square glass baking dish. Spoon in beef, and top with chiles and grated cheese. Add remaining cornbread batter. Bake uncovered at 350 degrees for 40 to 50 minutes, until golden brown. Serves 4 to 6.
