COUNTRY CHICKEN 
2 cut-up broiler-fryers
6 peeled & cubed med. potatoes
1/2 lb. sliced bacon
2 peeled & chopped lg. onions or 12 pearl onions
6 scraped & cubed lg. carrots

In large, heavy pot, brown chicken parts a few minutes on both sides. Then layer in the potato and carrot cubes and chopped onions. Lay bacon strips across the top, closely to form a lid. Cover pot and bake 1 1/4 hours, take off lid and bake 15 minutes more so bacon will brown. This really needs no further seasoning, as the bacon's smoky-salty flavor melds with the vegetables and chicken flavors but you can sprinkle each serving with parsley as you dish it out. Bake at 350 degrees for 90 minutes.
