SPICY YOGURT CAKE | |
1/2 c. butter 1 c. sugar 3 eggs 2 c. sifted flour 1 tsp. salt 2 tsp. baking powder 1 c. yogurt 1 tsp. baking soda 1 tsp. vanilla extract 3/4 c. raisins 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. cloves 1/2 c. chopped walnuts Cream butter and sugar. Add eggs; beat well. Sift flour, salt and baking powder together. Add gradually to batter, beating on medium speed. Combine yogurt and soda; add to batter a few tablespoons at a time. Add vanilla. Mix raisins, spices and walnuts together. Pour half the batter into a buttered 9 inch pan. Sprinkle half the raisin mixture over batter. Pour on remaining batter; top with remaining raisin mixture. Bake at 350 degrees for 40 to 45 minutes. Greeks prefer this recipe made as cupcakes. |
