PARSLEY CARROTS 
1 lb. carrots (cut 1 1/4" slice)
1/4 tsp. ginger
1 tbsp. brown sugar
2 tbsp. butter
2 tbsp. parsley, finely chopped

Cook carrots for 10-12 minutes in enough water to cover. Mix ginger, with brown sugar, sprinkle over carrots. Add melted butter; stir. Sprinkle with parsley before serving. Serves 6.
