APPLE BRAN MUFFINS 
2 tbsp. shortening
1/4 c. sugar
1 egg
1 c. All Bran
3/4 c. milk
1 c. flour
1/2 tsp. salt
2 1/2 tsp. baking powder
1 c. thinly sliced apples
2 tbsp. brown sugar

Cream shortening and sugar thoroughly. Add egg and heat until creamy. Add All Bran and milk and let cook until moisture is taken up. Sift flour, salt, and baking powder together and add to first mixture, stirring only until flour disappears. Fill greased muffin tins 2/3 full. Stick apple slices into batter and sprinkle with brown sugar. Bake in a 400 degree oven about 30 minutes.
