SAUCY CHICKEN AND RICE 
2/3 c. celery, sliced
1/2 c. onion, chopped
2 tbsp. butter
2 tbsp. flour
2 c. tomato, chipped
2 c. chicken, cooked and chopped
1/2 lb. Velveeta
1/2 tsp. basil
4 c. rice, cooked

Saute celery and onion in butter; blend in flour. Add tomato, chicken, cheese, and basil, stirring until the cheese is melted. Serve over rice. This recipe makes 4 servings.
