PIONEER PICNIC COOKIES | |
2/3 c. softened butter 1 c. white sugar 2 eggs 1/2 tsp. baking soda 12 oz. pkg. semi-sweet chocolate chips 2/3 c. shortening 1 c. light brown sugar 1 tbsp. vanilla extract 3 1/4 c. all-purpose flour 1/2 tsp. salt 1 1/2 c. chopped walnuts Blend butter and shortening until smooth and fluffy. Add both sugars and cream well. Add eggs, beating well. Stir in vanilla. Mix dry ingredients and gradually add to batter. Add chocolate chips and nuts. Mix well and drop by teaspoonfuls onto ungreased baking sheets about 1-inch apart. Bake at 375°F for 8 minutes. Cool briefly on baking sheet, then remove to cooling racks. Store in airtight container. Yields about 7 dozen 2-inch cookies. |
