BROWNED RICE PILAF 
1/2 c. butter
1 lg. onion, diced
2 tbsp. minced garlic
1 c. raw rice
2 c. boiling chicken broth
Salt and pepper to taste

Melt butter over medium heat in a pot with a good fitting top. Add onion and garlic and saute until soft and golden. Add rice and mix well. Cook with frequent mixing for 2 minutes. Add boiling chicken broth.

Reduce heat to low, cover and steam for about 20 minutes until liquid is absorbed and rice is al dente. Don't remove cover before 20 minutes.
