ORANGE PEEL WITH COCONUT 
2 large oranges
cold water (enough to cover)
2 cups sugar
2 to 3 cups coconut flakes

Wash oranges. Remove peel in quarters. Scrape off excess white inner skin. Cut peel in strips.

Place in saucepan and cover with water. Bring to a boil, then drain off water. Repeat 2 more times.

Measure peel and combine in saucepan with an equal amount of sugar. Cover with water. Bring to a boil and cook until syrup is almost absorbed.

Remove from heat and drain on racks for 1 minute. Roll quickly in coconut flakes.

Makes 1 pound.
