TARRAGON-DIJON CHICKEN 
6 chicken breasts, skinned and rinsed
Non-stick cooking spray
2/3 c. unsweetened pineapple juice
1/2 c. white wine Worcestershire sauce
1 tbsp. country-style Dijon mustard
1/2 tsp. dried tarragon

Spray 9 x 13 inch casserole. Place chicken flesh side down. Combine remaining ingredients and pour over chicken. Cover snugly with foil. Bake 1 hour at 350 degrees. Uncover, turn chicken flesh side up and bake additional 10 minutes. Serve with juice. Serves 6.
