VEAL CASSEROLE 
1 lb. veal, cut the meat into 1 inch cubes and flour well
2 tbsp. shortening
1 1/2 c. celery, sliced
2 sm. onions, chopped
1 can (10 oz.) condensed cream of chicken soup
1 can (10 oz.) condensed cream of mushroom soup
1 soup can of water
3 tbsp. soy sauce
1/2 c. uncooked rice (not Minute Rice)

Heat the oven to 350 degrees. Coat meat with the flour. Melt the shortening in large skillet and cook the veal until it is done, and then stir everything else in the pan and simmer for just about 3 minutes.

Pour into ungreased 3 quart casserole and cover. Bake 1 1/2 hours. If desired, sprinkle with chopped cashews and then sprinkle with soy sauce. 6 servings.
