QUICHE LORRAINE | |
One unbaked (9 inch) pastry shell, chilled 1/2 lb. bacon, fried crisp 1/2 lb. Swiss cheese, sliced paper thin 2 c. light cream 3 eggs, and 1 egg yolk, slightly beaten 1 tbsp. flour 1/2 tsp. salt Few grains nutmeg 1 tbsp. melted butter, slightly browned In the bottom of an unbaked pastry shell, crumble the bacon. Cover with slices of Swiss cheese. In a bowl beat the light cream, eggs and egg yolk, flour, salt and nutmeg until blended. Pour over the cheese. Melt butter until it begins to brown. Pour over the custard mixture. Bake in hot oven (425 degrees) for 15 minutes, lower heat to moderate oven (350 degrees) and continue baking until custard is set and golden on top. Remove to rack. Serve warm. |
