QUICHE LORRAINE 
Pastry for 1 pie crust
1 tbsp. butter, softened
12 bacon slices
2 c. half and half
3/4 tsp. salt
1/8 tsp. ground nutmeg
1 c. Swiss or cheddar cheese, shredded
1 c. broccoli, cooked (optional)
4 eggs

Line 9 inch pie plate with pastry. In a 10 inch skillet over medium heat, fry bacon until crisp and brown. Drain bacon on paper towels and crumble. Preheat oven to 425 degrees. Spread crumbled bacon pieces into pie crust. Add broccoli (optional). With wire whisk, beat eggs, half and half, salt and nutmeg. Stir in cheese. Pour egg mixture into crust. Bake 15 minutes; turn oven control to 325 degrees; bake 35 minutes. quiche is cooked when a knife inserted in center comes out clean.
