MATZAH-APPLE KUGEL 
6 matzahs
6 lg. apples
1 1/2 c. raisins
2 tsp. cinnamon
1/2 tsp. salt
Dash of nutmeg
Grated rind of 2 lemons
8 tbsp. melted butter
8 eggs, beaten with 4 tbsp. water
Juice 1/2 lemon

Soak matzah in hot water until soft but still firm (about 1 minute). Drain in colander. Pare and cut apples in bite-sized pieces (keep in salted water until all pared). Add raisins, cinnamon, salt, nutmeg, lemon rind, sugar and butter. Mix well. Add beaten eggs and mix again. Bake in 9x13 Pyrex pan, greased, at 350 degrees for 45-60 minutes.
