RED VELVET CAKE 
2 1/2 c. self rising flour
1 c. buttermilk
1 1/2 c. vegetable oil
1 tsp. baking soda
1 tsp. vanilla extract
2 (1 oz.) red cake coloring
1 1/2 c. sugar
1 tsp. cocoa
1 tsp. vinegar, white
2 lg. eggs

Heat oven to 350 degrees. Mix all ingredients with an electric mixer. Spray three round cake pans with non-stick coating. Pour batter equally.

Bake 20 minute. Cool cake for 10 minutes.

ICING:

1 stick butter
8 oz. cream cheese
1 box confectioners sugar
2 c. chopped pecans

Cream butter, cream cheese, and confectioners sugar in a bowl. Beat until fluffy. Fold in pecans.
