BLACKBERRY CAKE | |
2 c. white sugar 3 whole eggs 2 tsp. baking soda 2 tsp. nutmeg 2 tsp. cinnamon 3 1/2 c. flour 1 1/2 c. blackberries (fresh or canned) 1 c. shortening 6 tbsp. buttermilk or 1 tbsp. vinegar in 4 tbsp. canned milk Cream shortening; add sugar and unbeaten eggs; blend well. Add nutmeg, cinnamon, and berries; blend well. Mix soda in the milk; add to the mixture and blend well. Add flour a little at a time. Bake 35-40 minutes in a 350 degree oven. Makes 3 large 9-inch layers. |
