BLUEFISH W/ MUSTARD-HORSERADISH
SAUCE
 
2 lbs bluefish fillets
1/4 cup mayonnaise, (regular or light)
1/4 cup dijon-style mustard
1 1/2 tsp. prepared horseradish, (from a jar)

In a large pan, place enough foil to cover pan, spray with cooking spray. Place fillets skin side down in pan.

In a bowl, mix remaining ingredients, spread evenly on fish.

Bake in preheated 400°F oven for 20 minutes or until fish flakes easily with a fork.

Wonderful 'bite' to this fish dish.
