STUFFED ZUCCHINI (MICROWAVE) 
4 med. zucchini
2 tbsp. water
1 3/4 c. water
1 (6 oz.) pkg. chicken flavored stuffing mix
1/4 c. butter

Combine zucchini and 2 tablespoons water in baking dish covered with waxed paper. Cook on high for 10 to 12 minutes, rotating once. Cool to handle. Cut lengthwise and scoop out centers, saving pulp. Combine 1 3/4 cup water, butter and seasonings from pulp. Combine 1 3/4 cup water, butter and seasonings from stuffing mix in a 4 cup container. Cook on high 3 to 4 minutes, covered with waxed paper. Let stand 5 minutes, covered tightly with foil. Stir in bread crumbs from mix until moistened. Stir in zucchini pulp. Spoon into zucchini shells and cover with wax paper. Cook on high 4 to 6 minutes.

Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
