CHILI BAKE 
1/4 c. minced onion
1 lb. ground beef
2 (8 oz.) cans tomato sauce
1/4 c. catsup
1 1/4 - 1 1/2 tsp. chili powder
1 tsp. salt (scant)
2 (16 oz.) cans red beans
1 pkg. Jiffy corn muffin mix
1 egg
1/3 c. milk

Preheat oven to 400 degrees F. In skillet, saute onion with ground beef until browned, drain off fat. Add tomato sauce, catsup, chili powder, salt and undrained beans. Simmer on stove over medium heat.

Prepare corn muffin mix according to package directions. Pour chili mixture into a 13x9 inch casserole. Gently spoon corn muffin mixture around edges of casserole, 1 inch away from sides. Bake in a 400 degree oven for 20-25 minutes or until corn muffin mix is browned.
