2 tbsp. butter
2 or 3 cloves garlic (crushed)
1/4 c. olive oil
4 boneless chicken breast halves, cut into 1/2 inch strips
12 oz. Shitake mushrooms, halved or quartered
1 1/2 c. heavy cream
1 1/2 c. grated Parmesan cheese
1/2 tsp. pepper
1 c. chopped ripe tomatoes
2 lbs. dried or 18 oz. fresh spinach fettucini
Parsley for garnish
