SICILIAN FRIED FISH 
4 (2 lbs.) slices halibut
2 lbs. tomatoes, peeled and chopped
1 tbsp. chopped parsley
1 garlic clove, minced
1/2 c. white vinegar
1/4 c. olive oil
Salt and pepper to taste
1 (10 oz.) pkg. frozen peas

Brown fish in skillet with hot oil. Add parsley, garlic, and vinegar; cook until liquid evaporates. Add pepper, salt, and tomatoes. Cover and simmer for 5 minutes. Add peas, cover and simmer for 30 minutes. Serves 4.
