UNFORGETTABLE PUMPKIN ROLL 
Grease a 10x15 cookie sheet with Crisco. Line with wax paper and grease again.

Mix together: 1 c. sugar 2/3-1 c. pumpkin 1 tsp. baking soda 3/4 c. flour

Spread in pan. Can sprinkle with pecans; press pecans in slightly. Bake at 350 degrees for 15-20 minutes. On a laid out dish towel, sprinkle 2 cups powdered sugar. Turn dough onto dish towel and roll lengthwise (keeping the wax paper on). Cool in refrigerator a couple hours.

Roll out cooled dough and remove wax paper. Spread on filling and roll back up (without dish towel).

FILLING:

2 tbsp. butter
3/4 tsp. vanilla
8 oz. pkg. cream cheese
1 c. powdered sugar
