CHICKEN PICCATA 
4 chicken breasts, deboned
Salt and pepper to taste
flour
1 egg, beaten
1/2 c. bread crumbs
1/2 c. grated Parmesan cheese
2 tbsp. butter
2 tbsp. cooking oil

Cut each half chicken breast into 2 slices (making 16 in all). Pound the slices. Season with salt and pepper. Dip in flour, then the beaten egg. Now dip the slices in a mixture of bread crumbs and cheese. Brown slightly in oil and butter. Put in a large flat pan (like a cake pan), cover with foil, and bake in a preheated 300 degree oven for 1/2 hour. Remove foil for the last 10 minutes so the pieces will crisp a bit. Serves 4.
