BRAN MUFFINS 
3 c. All Bran (Kellogg)
1 c. boiling water
3/4 c. sugar
1/2 c. applesauce
2 c. buttermilk
2 eggs
2 c. flour
2 1/2 tsp. baking soda
1 c. raisins

Place bran in bowl. Pour boiling water over - stir - add remaining ingredients - mix well. Mixture will keep 6 weeks in refrigerator in a covered container. Place 2 paper cups in each muffin pan until half full - use a MICROWAVE muffin pan. 2 muffins - microwave high 1 minute. 6 muffins - microwave 1 1/2 to 2 1/2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
