TWICE BAKED POTATOES | |
10 med. baking potatoes 2 sticks butter 3/4 c. chopped onion 1 c. half and half 2 tsp. salt 3/4 tsp. pepper 1 c. shredded mild cheese Scrub potatoes; dry and pierce. Bake without foil at 450 degrees for about 1 hour. Melt butter and saute onion until clear and tender. Cut a lengthwise slice from top of each potato, scoop out pulp, and mash pulp with cream, salt, pepper and sauteed onion in butter. Mash until fluffy. Fill reserved skin shells with the mixture and top with shredded cheese. Bake at 350 degrees for 15-20 minutes until hot. A great make ahead dish. Yield 10 servings. |
