PEACH COBBLER 
2 c. sifted all-purpose flour
1/4 c. sugar
3 tsp. baking powder
3/4 tsp. salt
3 tbsp. butter
3 tbsp. vegetable shortening
2/3 to 3/4 c. milk

Sift together flour, sugar, baking powder and salt. Add butter and shortening, and cut in with pastry blender or 2 knives until mixture is fine. Stir in enough milk to make a soft dough, stirring gently and as little as possible to prevent dough from becoming rubbery. 1 tbsp. cornstarch 1 c. boiling water 3 c. fresh sliced peaches 1/2 tbsp. butter 1/2 tsp. cinnamon

Mix together sugar and cornstarch in a saucepan. Add water gradually and boil 1 minute, stirring constantly. Add peaches. Pour into a 10 x 6 x 3 inch baking dish. Dot with butter and sprinkle with cinnamon. Drop the dough by spoonfuls onto fruit. Bake at 400 degrees for 30 minutes, or until dough turns brown. Serves warm. Serves 6.
