SWEET POTATO BISCUITS 
2 c. flour
3 tsp. baking powder
1 1/2 tsp. salt
4 tbsp. sugar
6 tbsp. fat
4 c. mashed sweet potatoes, cooked

Sift together flour, baking powder and salt. Add sugar and fat to sweet potatoes while hot. Combine potato and flour mixture. Knead for 1 minute. Roll or pat to 3/4 inch thickness. Cut and bake at 425 degrees for 12-15 minutes. Makes 30.
