POTATO NOODLES | |
3/4 c. finely grated raw potato 1 1/2 c. flour 1 egg 1/4 tsp. salt 4 slices bacon, diced and fried 1/2 c. diced onion Stir potato, flour, egg and salt together. Dough will be soft and wet. With edge of spoon dipped in cold water cut off 1/4 inch portions again side of bowl. Drip into 4 quarts boiling water. Cook 15 minutes. Stir frequently. Drain in colander. Saute onion in 2 tablespoons fat; add bacon and toss with noodles. |
