MEXICAN CASSEROLE 
1 box curly short macaroni, cooked and drained
1 lg. can of Spam, cubed
1 lg. can of tomatoes, mashed
1 pkg. frozen peas, cooked and drained
1 green pepper, chopped in sm. pieces
1 lg. onion, chopped small
1 lg. can of mushrooms
1 lg. pkg. Cheddar cheese, grated
1 stick butter
Salt & pepper to taste

Use 3 quart casserole dish. Bake at 350 degrees for 45 minutes to 1 hour.

In large frying pan, melt butter; add Spam, onions, peppers, simmer for 15 to 20 minutes. Add peas, mushrooms and tomatoes, salt and pepper. Cook about 10 minutes more. Put macaroni and this mixture in the casserole. Mix well. Add grated Cheddar cheese and toss thoroughly. Serve with tossed salad and hot onion bread.
