JUDITH'S BEEF QUICHE 
1/2 lb. ground beef
Salt
Pastry
3 eggs
6 oz. shredded Swiss cheese
1 sm. can drained mushrooms
1 1/4 c. half & half cream
1/8 tsp. sugar
1 tsp. chopped chives

Cook ground beef. Drain fat. Put meat in bowl, add salt and mix well. Line 9-inch pie shell with pastry. Crimp edges and prick sides with fork. Beat eggs. Brush pastry with a small amount of beaten eggs. Bake at 450 degrees for 10 minutes. Remove from oven. Lower oven temperature to 325 degrees.

Arrange Swiss cheese in bottom of pie shell. Sprinkle ground beef over cheese. To beaten eggs, add mushrooms, cream, sugar and chives. Pour mixture over beef and cheese. Bake at 325 degrees for 50 minutes. Wait 10-15 minutes. Serve.
