WALDORF SALAD 
1 c. skinned diced apple
1/2 c. unskinned apple
1 1/2 c. diced celery
2/3 c. mayonnaise
1/2 tsp. Dijon mustard
1 c. toasted chopped walnuts
Chopped Romaine lettuce

Combine the diced apples, celery, the mayonnaise and the mustard. Arrange the salad on the chopped lettuce and top with the walnuts. Serve at once as the apples will discolor if left out.
