CHICKEN 'N RED POTATOES | |
6 to 8 red potatoes, diced 2 to 3 lb. cut up fryer or 4 chicken breasts 3 tbsp. rosemary 1/2 tsp. pepper 1 tsp. salt 1/2 stick butter 1/2 c. water Spray Pam on a 9 x 13-inch pan. Mix the seasonings together. Coat chicken pieces with seasonings. Place potatoes on bottom of pan and cut chicken pieces on top. Put dabs of butter on top of the chicken. Pour water into pan and bake at 350°F for 40 to 50 minutes or until potatoes are soft. Baste chicken with juices in pan periodically. Yield: 4 servings. |
