MARINATED TOMATOES AND ONIONS 
2 lbs. firm tomatoes, cored & sliced
2 med. onions, sliced
2 tbsp. chopped herbs (dill, chives, oregano, parsley, thyme, etc.)
1/2 c. salad oil
1/2 c. cider vinegar
1/4 c. white wine
1/4 c. granulated sugar
1/2 tsp. salt
Several dashes freshly ground pepper
Fresh parsley for garnish

Put the tomatoes in a large bowl. Place the onions on top. Sprinkle the herbs on top. In a small bowl, blend the oil, vinegar, wine, sugar, salt and pepper with a wire whisk until all the sugar is dissolved. Pour over the tomatoes and onions. Cover with plastic wrap and refrigerate for several hours. Serve chilled, garnished with fresh parsley. Serves 6.
