JACKIE'S CARROT CAKE 
CAKE:

2 c. all-purpose flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 c. carrots, finely chopped
1 c. oil
4 eggs

Grease and flour 13 x 9 x 2 inch pan or 2 (9-inch) round pans. In mixing bowl, combine first 6 ingredients, add next 3 beating with electric mixer until combined (2 minutes on medium speed). Bake at 350 degrees for 50 to 60 minutes. Cool on wire and frost with cream cheese frosting.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese (soft)
1/4 c. butter
1 tsp. vanilla
2 c. powdered sugar, sifted
