MICROWAVE BOSTON EGGPLANT
CASSEROLE
 
1/2 lb. lean ground beef
1 sm. clove of garlic, crushed
1 sm. green pepper, finely chopped
2 slices bacon, cooked & crumbled (reserve drippings)
1 sm. onion, finely chopped
1 sm. eggplant, peeled & cut into 1/2 inch slices
1/4 c. crumbled feta cheese
1/2 c. (15 oz.) tomato sauce
1/2 tsp. salt
Pepper to taste
1/2 c. seasoned croutons

Combine beef, onion, garlic, green pepper and reserved bacon drippings in a medium casserole dish. Heat for 3 to 4 minutes, uncovered. Vegetables should be tender and beef slightly browned.

Add eggplant slices, feta cheese, tomato sauce, crumbled bacon, salt and pepper. Blend well. Cover and heat for 4 to 6 minutes until eggplant is tender. Sprinkle with croutons and heat an additional 1/2 to 1 minute until heated through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
