POOR MAN'S LOBSTER 
2 lbs. fish
1 1/2 qts. water with 1 tsp. salt added
1 med. sized onion
2 tbsp. butter
1 clove garlic (optional)
2 tbsp. lemon juice
Dash of chopped parsley
Salt and pepper to taste

Bring water to boil. Add onion, salt, butter, and garlic; continue to boil. Add fish and boil for an additional 10 minutes. Remove fish from water; drain. Pour melted butter over fish, chopped parsley, and lemon juice; salt and pepper to taste. Can be served hot or cold.
