POTATO LOAF 
3 tbsp. butter
3 tbsp. flour
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. milk
1 tbsp. minced parsley
1 tsp. grated onion
6 med. potatoes, cooked and peeled, cut into 1/2 inch cubes
1 c. grated sharp cheddar cheese

Melt butter; blend in flour, salt, and pepper. Add milk; cook, stirring constantly until thickened and smooth; stir in parsley, onion, and potatoes, mixing lightly. Turn into well buttered loaf pan. Cover and place in refrigerator overnight. Unmold onto buttered oven proof platter. Bake at 350 degrees for 45 minutes. Sprinkle cheese on top and return to oven for 15 minutes or until cheese is melted. Slice to serve. Yields 6 servings.
