4 boneless chicken breasts (5 oz. each)
1/2 tsp. salt
Freshly ground pepper to taste
4 tsp. prepared yellow mustard
1/4 c. shredded Swiss cheese
1/4 c. dry bread crumbs
1 1/2 tsp. Italian seasoning

Arrange chicken breasts in a buttered flat pan. Sprinkle with salt and pepper and bake at 350 degrees for 30 minutes. Remove from oven and let chicken cool 15 or 20 minutes. Spread chicken with mustard. Mix cheese, bread crumbs and Italian seasoning. Sprinkle over chicken. Bake at 350 degrees until cheese melts, about 10 or 15 minutes. Yield: 4 servings.
