MASHED POTATO CASSEROLE 
6 or 8 (med. to lg.) potatoes, peeled, boiled and mashed like mashed potatoes
8 oz. sour cream
3 c. mild Cheddar cheese, shredded

Layer in rectangular 9x11 inch Pyrex pan, mashed potatoes, sour cream and cheese and repeat process. Bake at 350 degrees until cheese is melted, about 10 minutes. Top with bacon bits. Chives are optional.
