IMPOSSIBLE BROCCOLI PIE 
1 (10 oz.) pkg. frozen chopped broccoli
3 c. (12 oz.) shredded Cheddar cheese
1 1/2 c. cubed, cooked chicken or 1 1/2 c. chopped ham
2/3 c. chopped onion
1 1/3 c. milk
3 eggs
3/4 c. Bisquick baking mix
3/4 tsp. salt (if desired)
1/4 tsp. pepper

Set the oven at 400°F. Grease pie plate 10 x 1 1/2-inch. Rinse broccoli under running cold water to thaw. Drain thoroughly. Mix broccoli, 2 cups cheese, the chicken and onion. Place in the plate. Beat milk, eggs, baking mix, salt and pepper until smooth (15 seconds) in a blender on high or on high 1 minute with a hand beater. Pour into plate.

Bake until knife inserted in center comes out clean, 25 to 35 minutes. Top with remaining cheese.

Bake just until the cheese is melted, 1 to 2 minutes longer. Cool 5 minutes.

Serves 6 to 8.
