SALMON CROQUETTES 
1 lg. can salmon
2 c. soft bread crumbs
2 eggs, well beaten
1 tbsp. butter
1 tbsp. baking powder
Salt and pepper to taste

Pour salmon and liquid into bowl. Remove skin and bones (or crush bones as they are good source of calcium). Add crumbs, beaten eggs, butter, baking powder, salt and pepper and combine into smooth mixture. Form into croquettes. Roll in cornmeal and fry in skillet with 1/4 inch of hot shortening. Turn when golden brown.
