CAKE DOUGHNUTS 
Vegetable oil
3 1/2 c. all purpose flour
1 c. sugar
3/4 c. milk
2 tbsp. shortening
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
2 eggs

Heat 2-3 inches of oil in deep fryer (375 degrees). Beat 1 1/2 cups flour and remaining ingredients in bowl on low speed 30 seconds. Beat on medium speed 2 minutes. Stir in remaining flour. Turn dough onto floured surface. Coat lightly with flour. Roll 3/8 inch thick. Cut with floured doughnut cutter. Slide into hot oil with spatula. Turn over as they rise to surface. Fry until golden brown, 1-2 minutes each side. Drain. Serve plain or with powdered sugar or icing.
