SCALLOPED POTATOES 
5 lg. potatoes
1 onion, thinly sliced
1/4 tsp. ground nutmeg
1/8 tsp. ground pepper
1 c. evaporated skim milk

Peel the potatoes and slice them paper thin. Layer the potatoes and the onions in a non-stick baking pan, sprinkling lightly with the nutmeg and pepper as you layer. Pour the evaporated skim milk over them and bake the potatoes in a 350 degree oven for 45 minutes or until they are tender. Add extra skim milk if necessary. Serves 6.
