MICROWAVE MINT CHOCOLATE FUDGE 
3 c. sugar
1 can (5 1/3 oz.) evaporated milk
3/4 c. butter
1 pkg. (12 oz.) semi-sweet chocolate chips
1 jar (7 oz.) marshmallow cream
1/4 tsp. peppermint extract

In 3 quart casserole dish combine sugar, evaporated milk and butter. Microwave at 7 for 12 minutes, stirring occasionally. Stir in chips until melted. Add marshmallow cream and peppermint extract, beating until blended. Pour into buttered 12 x 8 inch baking dish. Chill until set. Cut into squares. Makes 3 pounds.

Since microwave ovens vary in power, you may need to adjust your cooking time.
