2 cans chicken noodles (heated) 2 c. cooked MJB long grain instant rice 1 lg. stewing hen (boiled, deboned, and meat diced for gravy) Broth from stewing hen for gravy 1 c. raw, diced onions 3 c. diced celery 3 c. diced tomatoes 1 lg. can crushed pineapple and juice 2 c. grated Cheddar cheese (mild) 1 pkg. sliced almonds 1 c. shredded coconut Few drops yellow food coloring to enhance color of chicken gravy One of the secrets to this specialty dish is to have lots of the good chicken gravy. To get the "sweet and sour" flavor of this dinner, place each ingredient right on top of each other, rather than spreading it about individually on the plates. Your plate of food should resembled a small mountain. Assemble as follows: Chinese noodles, make a nice nest; white rice, a generous scoop; chicken gravy, a generous serving, cover well; onions, 1 teaspoonful; celery, 2 teaspoonful; another bowl of gravy, more if you like; grated Cheddar cheese, 1 tablespoonful; tomatoes, 1 tablespoonful; crushed pineapple, 2 tablespoons; sliced almonds, 1 teaspoonful; shredded coconut, 1 tablespoonful; more gravy, if you wish. This is deliciously different and wonderful for serving 6-8 people buffet style. |
