VENISON MEAT LOAF 
2 eggs
1 (8 oz.) tomato sauce
1 medium onion, finely chopped
1 c. dry bread crumbs
1 1/2 tsp. salt
1/8 tsp. pepper
2 lb. ground venison
2 tbsp. brown sugar
2 tbsp. spicy brown mustard
2 tbsp. cider vinegar

In a large bowl, lightly beat eggs. Add tomato sauce, onions, bread crumbs, salt and pepper. Add venison and mix well. Press into an ungreased 9 x 5 x 3-inch loaf pan. Combine brown sugar, mustard and vinegar. Pour over meat loaf.

Bake, uncovered, at 350°F for 70 minutes. To make sandwiches, put chilled slices of meat loaf on Italian bread. Top with a slice of Mozzarella cheese and broil until cheese is melted.

My wife and son prefer this recipe over regular meatloaf made with ground beef. The simple mustard sauce makes a nice coating to the meatloaf. Thank you for the great recipe.
