MANDELBROT (Toasted Almond
Cookie)
 
3 c. flour, sifted
1/2 tsp. salt
1 c. sugar
1/2 tsp. almond extract
Chocolate: 3 tsp. cocoa, 1 tsp. sugar, mixed in 1/4 of dough
3 tsp. baking powder
1/2 c. vegetable shortening
3 eggs

Mix and sift flour, baking powder and salt. Beat vegetable shortening until creamy. Gradually beat in sugar. Add eggs one at a time, beating well after each. Stir in dry ingredients and almond extract.

Shape into two flat loaves on greased baking sheet. Bake in 350 degree oven for 30-35 minutes. Cut into 1/2 inch slices and place on baking sheet cut side up. Place under low heat and toast to golden brown. Turn and toast on other side.
