APPLE DATE CAKE 
2 c. sugar
1 1/2 c. cooking oil
2 tsp. vanilla
2 eggs, well beaten
Juice of 1 lemon
1 tsp. salt
3 c. plain flour
1 1/4 tsp. baking soda
2 c. tart apples, peeled and chopped
1 c. dates, chopped
1 1/2 - 2 c. pecans, chopped

Combine sugar, oil, vanilla, eggs, lemon juice and salt in mixing bowl. Beat well. Mix flour and soda, add to first mixture and beat well again. Add apples, dates and pecans. Mix well. The batter at this point will be very thick and you may need to make it with your hands. Spoon batter into greased and floured 10 inch tube pan. Bake at 325 degrees for 1 1/2 hours or until done. Pour following over hot cake in pan and let cake set until cold.

TOPPING:

1 c. brown sugar
1/4 c. milk
1 stick butter

Mix together.
