BROILED STUFFED FLOUNDER 
6 sm. flounders, cleaned, split & the backbone removed without separating the top from the bottom
2 tbsp. green peppers, finely chopped
1 med. onion, finely chopped
2 tsp. parsley, chopped
Salt and pepper to taste
1/2 tsp. Tabasco pepper sauce
1 clove garlic
3 c. crab meat
1/2 c. celery, chopped
1 - 2 pimientos, chopped
1/2 c. butter

Melt butter in a heavy saucepan and saute the seasonings. Add the salt, pepper and Tabasco pepper sauce. Cook until vegetables are tender and the onion takes on a color. Remove, cool and add crab meat. Mix thoroughly. Stuff the flounders with the crab meat mixtures, fasten halves with skewers and arrange the stuffed fish on a buttered dish. Sprinkle with salt and white pepper and broil slowly, basting frequently with mixture of butter, lemon, juice, until golden brown. First on one side, then the other. Serves 6.
